VEG DUM BIRIYANI
Ingredients:
- Beans
- Potato
- Carrot
- Gobi
- Green peas
- Green chilli
- Mint leafs
- Coriander
- Paneer
- Chilli powder
- Turmeric
- G/G paste
- Garam masala
- Coriander powder
- Ajinomoto
- Salt
- Curd
- Cloves (2)
- Cinnamon
- Cardammom
- Star anies
- Bay leaf
- Ghee
- Fried onions
- Soaked basmati rice (about half n hour)
- All purpose flour (dough)
- Saffron
Procedure:
- First start by chopping beans, carrot, gobi, potato, chilli, mint leaves, coriander and paneer into cubes.
- Fry potatoes, carrots, beans and gobi in oil, untill it becomes 80% tender.
- Start with marination. take a bowl, put the fried vegetables, green chilli, mint leaves, coriander, curd, chilli powder, turmeric, g/g paste, garam masala, coriander powder, ajinomoto(optional), salt and fried onions.
- Mix them well and freeze it atleast for 4 hours.
- Place a sauce pot and put required oil. Add cloves, cinnamon, cardammom, star anies, bay leaf and add sufficient water let it boil, add sufficient salt as well as the soaked rice.

- Take another sauce pot, place the marinated ingredients to the bottom of the pot. Add strained rice on top of it. Garnish with fried onions, mint leaves, coriander leaves, saffron and ghee.
- Take a lid, apply the dough to the edges of the lid and close the pot (Dum style of cooking).
- Take a tawa, put it on a stove and let the flame be low. put the pot on tawa and let it cook for about 20 mins on a low flame and the next 5 mins on a high flame and turn off the flame.
- Open the lid after 5 mins. (The total duration of cooking in dum style is 25 mins on the flame and 5 mins off the flame) (30 mins).
