Chicken Dum Biriyani



Ingredients :
·       Chicken
·       Green chilli
·       Lemon juice
·       Mint leaves
·       Coriander leaves
·       Chilli powder
·       Coriander powder
·       Cumin powder
·       Turmeric
·       Salt
·       Black salt (optional) (very little)
·       Oil
·       Brown fried onion
·       ghee
·       Ginger garlic paste
·       Tasting salt
·       Curd
·       Basmati rice
·       Shajeera
·       Cardamom
·       Cinnamon
·       Big cinnamon (badi ilachi)
·       Bay leaf
·       Star anise
·       Javitri
·       Clove
·       Stone flower ( pathar ka phool)
·       Food colour (optional)

Procedure:
·       Step 1 : Marinate the chicken with green chilli slit, lemon juice, mint leaves, coriander leaves, chilli powder, coriander powder, cumin powder, garam masala, ginger garlic paste, turmeric, salt, tasting salt, oil, brown onion and curd; mix well and refrigerate for 3-6 hours.
·       Step 2 : Soak basmati rice for half hour before cooking.
·       Step 3 : Take a sauce pot, put it on a medium flame and add oil, shajeera, cinnamon, cardamom, big cardamom (badi ilachi), bay leaf, star anise, javitri, clove, stone flower, ginger garlic paste and water (Add  more water); let it boil and add salt for seasonings.
·       Once  the water get into boiling state add soaked rice and cook till 80% done.
·       Strain the excess water.
·       Step 4 : take hundi or a big sauce pot put it on a low flame, place the entire marinated chicken in the bottom of the pan and top it with entire 80% cooked rice.
·       Now , garnish with brown onion, mint leaf , coriander leaf, ghee and food colour (optional).
·       Step 5 : Close the hundi tight and seal it with atta dough, don’t let the vapour out. (Dum cooking Process)
·       Cook it for 20 min in low flame, after 20 min place the hundi on tawa and put it on a high flame, cook it for 5 min and off the flame.
·       Remove the hundi from tawa, Don’t open lid immediately; open it after 10 min.


Chicken dum biriyani is ready to serve with raita and salan.
