Rayalaseema Kodi Pulav



Ingredients :
·       Chicken curry cut
·       Onion
·       Green chilli
·       Tomatoes
·       Curry leaf
·       Ginger garlic paste
·       Curd
·       Cashew nut (Kaju)
·       Clove
·       Bay leaf
·       Cinnamon
·       Cardamom
·       Shajeera
·       Chilli powder
·       Turmeric
·       Coriander powder
·       Salt
·       Garam masala
·       Black pepper powder
·       Oil
·       Basmati rice
·       Ghee / Butter
·       Water / vegetable stock

Procedure :
·       Soak basmati rice for 30 min.
·       Take a sauce pot and put it on a medium flame, add Oil, Clove, Cinnamon, Cardamom, Bay leaf, Shajeera, Green Chilli slit, Curry leaf and onion; cook till onion looses its moisture and become golden brown in colour.
·       At this point of time add ginger garlic paste, chilli powder, turmeric, coriander powder, garam masala, black pepper powder, cashew nut and salt (very little); mix it well and add chopped tomatoes and chicken.
·       Sauté the chicken well and add curd into it, stir the mixture and cook it for 1 min.
·       Add water and salt into the mixture and mix well. (make sure salt is sufficient for rice)
·       Now add soaked rice, mint leaves and ghee / butter into it, close the sauce pot with lid and cook it on a low flame for 15-20 min (until rice absorbed entire water).

Rayalaseema kodi pulav is ready to serve; Majiga Pulusu is good accompaniment for it.


Caution : If we take 1 cup of rice add 1 ½ cup of water.
